Tuscan Chicken Ingredients

  • Chicken breasts: Boneless skinless chicken breasts cook in the skillet, then finish cooking in the sauce, getting juicy and tender! You could also use chicken thighs.
  • Seasonings: Simple spices like oregano, salt, and pepper bring out the natural flavor of the chicken and give the dish an Italian-inspired base without overwhelming the sauce.
  • Unsalted butter: I always prefer unsalted butter in recipes because the salt content varies in different brands of salted butter. By using unsalted butter, you can control how salty the dish is.
  • Garlic: Adds such great flavor to every recipe it’s added to!
  • Cherry tomatoes: These burst as they cook, adding a sweet, tangy pop to the sauce that pairs beautifully with the richness of the other ingredients.
  • Baby spinach: Spinach significantly wilts down when it cooks, so it looks like a lot when you add it but will shrink down.
  • Heavy cream: Creates a thick, creamy sauce.
  • Parmesan cheese: Freshly-grated Parmesan cheese will melt and taste so much better than the pre-grated cheese.

How to Make Tuscan Chicken

Step 1: Cook The Chicken

Season the chicken with salt, pepper, and dried oregano. Cook the chicken for eight minutes on each side, then remove from the skillet and tent loosely with foil. They will finish cooking later in the sauce.

Step 2: Cook the Tomatoes and Spinach

In the same skillet, melt butter. Add garlic and sauté until fragrant, about 30 seconds. Add cherry tomatoes and cook until softened, about three minutes. Add the spinach and cook until it begins to wilt, about two minutes.

Step 3: Make the Sauce

Whisk in the heavy cream and Parmesan cheese and bring to a simmer. Turn the heat to low and allow the sauce to thicken, about five minutes.

Step 4: Put it All Together

Return the chicken to the pan and cook until it is cooked through. Taste the sauce and add more salt and pepper to taste. Enjoy!

Storing and Reheating Leftovers

Store any leftover chicken and sauce in an airtight container in the refrigerator for up to three days. Reheat only the portion you plan to eat in the microwave or in a small skillet over low heat until heated through.
