I know that I’m not alone in trying to squeeze every single vegetable I can into my kids’ diets. But it can be a real challenge to find dishes that are delicious and keep their interest.

This great Green Bean recipe absolutely fits the bill. With unique and amazing flavors, it is a winner. The green beans remain bright green and plump, convincing even non bean lovers to give them a try. This is an ideal holiday side dish and would look great on your Thanksgiving table. But these are so simple they would be perfect to serve with my Easy Top Round Roast as a simple weeknight meal.

Green Beans Almondine Ingredients

  • Fresh Green Beans: These should be washed well, trimmed (removing the rough stems at the top), and cut into thirds.
  • Sliced Almonds: These are a key ingredient in the dish that brings some great crunch.
  • Garlic : Fresh garlic cloves bring some great flavor to this dish.
  • Unsalted Butter: I like to use unsalted butter because it allows me to control the salt content of the dish better. If you only have regular butter, just go easy with the salt you add.
  • Kosher Salt: If you only have table salt, start with half the amount.

Blanch the Green Beans

Sauté the Almonds

Melt butter in a large skillet and stir in the almonds and garlic. Cook until the almonds are golden brown.

Add the green beans to the skillet, season with salt, and cook until tender.

Tips and Tricks

  • Pick out ripe green beans. Make sure that the beans are firm to the touch, have a bright green color, free of blemishes, and don’t bend when you hold them out straight.
  • Blanching the green beans are key. Blanching, or par-cooking, is the process of partially cooking vegetables and then stopping that cooking quickly in ice water. It keeps this recipe quick and keeps the beans from over cooking.
  • You can use frozen green beans. If fresh beans aren’t in season, use frozen. Thaw them first, pat them dry, and then start the recipe on step 3.

Make Ahead

You can make this green beans almondine recipe ahead of time by blanching the beans, laying them on a paper towel to remove excess moisture, and storing in an airtight container for up to three days. When you are ready to serve them, prepare the almonds as directed followed by adding the beans and cook until done.

Storing and Reheating

Store your green beans almondine in an airtight container in the refrigerator for up to three days. To reheat a portion, place over low heat on the stove or in the microwave.
