We are headed into spring and my head is spinning with recipes that will sing spring to you. The first one I thought of was this bright and cheerful sugar cookie Fruit Pizza. It is a delicious recipe that I was tempted to eat for breakfast while prepping it for you.

This amazing giant cookie dessert would be perfect for a baby shower or a backyard bbq. But I think it would be a show stopper as an Easter dessert.

How to Make Fruit Pizza

We are using my sugar cookie recipe for the base of this delicious fruit pizza. It works perfectly and is simple to make. It works best if you make it on a 12 or 14 inch pizza pan. Note that a 12-inch pizza pan will make for a really thick pizza and will require a bit longer baking.

Step 2: Frost the Pizza

Now frost the cooled crust. The frosting of this easy fruit pizza recipe is my cream cheese frosting . If your family isn’t in love with cream cheese, my vanilla frosting would be amazing with this too. Just make sure to have your fruit all prepped so you can decorate as soon as it is frosted. That frosting hardens quickly.

Step 4: Add the Fruit

Finally, add some cut up fruit. You can read my tips and tricks for creating a beautiful patter below.

Fresh Fruit for Fruit Pizza

The most important things to consider when picking fruit is to use fruit that is colorful and sturdy. I like to avoid yellow fruits, like pineapple, because it doesn’t stand out against the frosting. Choose very ripe fruit that will hold its juice and not bleed into the frosting.

Making a Pattern

You can follow my pattern exactly, or you can go with something else. There is no right or wrong answer here. A few tips, but no matter how you add the fruit, it will be delicious, I promise.

  • Start in the center. Find the center of the pizza and put one piece of fruit there.
  • Alternate colors. For example, I wouldn’t do a ring of strawberries and then a ring of raspberries.
  • Slice fruit thin. It makes it easier to decorate and easier to eat.
  • Alternate how you lay fruit. You’ll notice that the kiwi is just placed, but the strawberries are layered. It gives it a nice look.

Making Ahead

If you are making this in advance, I would recommend making the sugar cookie base and frosting in advance. You can make both up to 24 hours in advance. Be sure to keep the cookie portion in an airtight container, or wrapped tightly in plastic wrap, and refrigerate the frosting. Then wait to frost and add the sliced fruit until the same day you are serving it.

Leftovers

Leftovers should be covered and stored in the refrigerator. They can be kept for up to five days, but taste best within the first 48 hours of making. As with all recipes use your best discretion when it comes to leftovers. I do not recommend freezing leftovers, as it will greatly change the consistency of the frosting.
