I am obsessed with simple salad recipes. To me, the first bite bursts with summer flavor, and I’m immediately feeling the warmth of the summer sun, regardless of the season. This Greek Salad is the perfect example. It has a handful of veggies, some cheese and olives, and the most simple Greek dressing. You will love this delightful fresh salad.

How to Make Greek Salad

Here is a brief overview of how this Greek salad recipe comes together. For the full recipe including all measurements, scroll to the recipe card at the bottom of the post.

Step 1: Combine the Chopped Vegetables.

In a large bowl, toss the cucumber, bell pepper, tomatoes, red onion, olives, and cheese.

Step 2: Make the Dressing

In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, oregano, salt, and black pepper.

Step 3: Put it All Together

Toss the dressing with the other salad ingredients, serve, and enjoy.

Homemade Greek Salad Dressing

A very simple Greek salad dressing pulls this recipe together perfectly! Ingredients like red wine vinegar, olive oil, and lemon juice are whisked together to create a dressing with bright, amazing flavor for the salad. I love my homemade recipe, but if making your own will hold you back from making this salad, use store-bought dressing. You could also use my Balsamic Dressing in this salad.

Serving and Storing Greek Salad

I recommend storing this salad in an airtight container in the refrigerator for up to three days. Please note that it is freshest the day it is put together, and the longer this salad sits, the more the vegetables will soften and break down.

Salad Variations

  • Add half a pound of cooked pasta and double the dressing to make a twist on my Greek Pasta Salad .
  • Greek Panzanella Salad
  • Add some protein by adding some grilled chicken or chickpeas (garbanzo beans) as we do in my Mediterranean salad . Cooked shrimp would also be delicious.
