These Grinch Sugar Cookie Bars are the easiest dessert you could make! And so yummy too! These are so super simple but with the green frosting and heart sprinkles they scream How the Grinch Stole Christmas! Quinn and I found it so cool.

So the other morning at the crack of dawn, before even God was awake, but of course Quinn was, we were in the kitchen and she wanted to listen to, “The Grump.” (How cute is that?) I was making coffee, she was eating breakfast, and she said to me, “Mom, you should really make a Grinch treat.” (Once it starts, she gets on board with him being the Grinch and not the Grump).
And then I thought of these cookie bars!
They are 100% inspired by the very talented Katrina and these cookies that she made a few years back.
I love that the symbol of the Grinch has become the green with his heart that grows so big at the end. Like we all get to focus on how he came around in the end.
Too sappy?

Anyway, these start with a sugar cookie mix, and end with my vanilla frosting and that’s it. If you want to go old school, make this sugar cookie recipe , but obviously I won’t judge you if you take this short cut. It’s kind of an amazing life saver.

Ingredients
- 1 17.5 oz pouch sugar cookie mix and what it takes to make the cookies (see note about making them from scratch)
- vanilla frosting
- green food coloring
- red heart sprinkles
Instructions
- Preheat your oven to 350 degrees. Spray a 9 by 13 inch pan with cooking spray.
- After making the sugar cookie mix, press it into the pan. Bake for 15 to 17 minutes or until the edges are golden brown.
- Once cool, frost with vanilla frosting tinted green. Cut into equal squares and put a heart sprinkle on each one.
