While I know that not everyone made a ham this year for Easter, I am guessing that some of you did. I would guess that many of you want to do things that feel normal.

And that is totally understandable. I can relate.

HAM SALAD INGREDIENTS

  • Cooked Ham
  • Hard Boiled Eggs
  • Celery
  • Onion
  • Sweet Relish
  • Mayonnaise
  • Mustard
  • Salt & Pepper

HOW TO MAKE HAM SALAD

This recipe really does take only about 10 minutes to make, making it the perfect way to use leftover ham. It is great for a weekday lunch too.

  1. Dice the ham and eggs into cubes. Chop the celery and onion fine.
  2. Put the ham, eggs, celery, and onion into a food processor and pulse for about 10 to 15 seconds. Check on it and pulse one or two more times until it is the crumbly texture you see below.
  3. Mix together the mayonnaise, relish, and HALF the salt and pepper that is called for.
  4. Mix the mayonnaise mixture into the ham mixture. Taste and add more salt as needed.

SERVING

This ham salad is perfect as is just throwing on a roll or a croissant. It makes a great lunch!

If you are on a low-carb diet or doing keto, I would recommend eating this on bib lettuce. That is delicious.

Finally, this recipe, because of how broken down it is, is great served at a party with a knife and some crackers. It is like a Ham Salad Spread.

PORTION SIZES

If you are wondering how much ham salad per person to account for, I would recommend about 1/2 a cup per salad.

This recipe makes 2 1/2 cups, which is 5 sandwiches .

STORING AND FREEZING

This delicious ham salad recipe should be stored in an airtight container and eaten within 3 days.

Because of the mayonnaise and celery in this recipe, I would not recommend freezing it.

Ingredients

  • 1 pound cooked ham diced
  • 2 hard boiled eggs chopped

  • 2 teaspoons onion finely chopped

  • 3/4 cup mayonnaise I used light
  • 1 tablespoon mustard
  • 1/2 teaspoon salt read instructions carefully about how to add
  • 1/4 teaspoon black pepper

Instructions

  • In a food processor, pulse the ham, eggs, celery, and onion together until everything is chopped fine but before it is a paste. (I find it best to process it for about 10 seconds, check on it, then pulse it until it becomes like a large crumb texture. See photo in the post.)
  • In a bowl whisk together the relish, mayonnaise, and mustard.
  • Add in 1/4 teaspoon salt, and 1/8 teaspoon pepper.
  • Stir together the mayonnaise mixture and ham mixture. Taste and add mor salt and pepper to taste. I used the full 1/2 teaspon salt and 1/4 teaspoon black pepper.
  • Serve with crackers or on bread. Store leftovers in an airtight container in the refrigerator for up to 3 days.
