You all know my obsession with all things taco. I’m not shy about the fact that chips, salsa, tacos, and margaritas are my love language.
But, I do try to be a responsible adult every once and a while. This amazing and easy sweet potato recipe is the perfect way for me to get my taco fix and also be a responsible healthy adult.
You would be surprised by how well taco meat, taco toppings, and sweet potatoes go together. They are truly a match made in heaven, and this is a dinner recipe that you are sure to fall in love with.
How to Make Taco Stuffed Sweet Potatoes
This is a brief overview of the recipe to give you a sense of how simple it is. Make sure you follow the full instructions in the recipe card below.
- Bake sweet potatoes. (More on this in a moment.)
- Make taco meat . This is really simple and just involves browning meat and adding in seasonings and tomato sauce.
- Top potatoes with taco meat.
Really, that is it. Sometimes I give you a recipe that I feel a little embarrassed to even call a recipe.

How to Bake Sweet Potatoes
Making sweet potatoes in the oven is simple. If you aren’t on the sweet potato train, get on board. The views are amazing. Once you fall in love you’ll want to make my brown sugar roasted sweet potatoes and my sweet potato fries .
I like to coat my sweet potatoes in a little bit of olive oil, poke them with a few holes and then bake them for an hour at 400 degrees.
The baking time will vary based on the size of the potato, but you can use a skewer to determine if they are done. It should slide in very easily.
Alternatively, you can make your sweet potatoes in the crock pot . It’s a great little trick for this recipe that can make it more of a 15 minute meal.

Making Taco Meat
Making taco meat is very simple. It requires just browning meat and adding taco seasoning and tomato sauce.
I love using my own homemade taco seasoning because I can control the flavors of it. That being said, if grabbing a packet at the store is easier, do it.
Using Ground Beef
This recipe, in sticking with making it a healthier meal, uses ground turkey. If your family doesn’t like ground turkey or you can’t find it, you can certainly use ground beef.
Pick a ground beef that is 90% lean. After browning it, but before adding in the taco seasoning, drain the fat.
Sweet Potato Taco Toppings
These Sweet Potato Tacos can be topped in so many different ways. Really whatever toppings you love on tacos, you will love on these.
- diced tomatoes
- shredded lettuce
- sliced olives
- shredded cheese
- sour cream
- pickled jalapeños
- fresh cilantro

Ingredients
- 6 medium sweet potatoes washed and scrubbed
- 2 tablespoons olive oil divided
- 1 pound ground turkey 93% lean (read here about using ground beef)
- 3 tablespoons homemade taco seasoning
- 15 ounces tomato sauce
- 15 ounces black beans drained and rinsed
- taco toppings (read here to see what toppings I recommend)
Instructions
- Preheat your oven to 400 degrees. Line a baking sheet with parchment paper and set aside.
- Poke the sweet potatoes several times with a fork. Rub with a 1 tablespoon of the olive oil. Place on the prepared baking sheet. Bake for 50 minutes or until it is easy to pierce them with a skewer.
- Towards the end of the cooking time for the potatoes, heat a large skillet over medium heat. Add 1 tablespoon of olive oil. Add the ground turkey and break it up, browning it.
- Drain any excess grease. Add in the taco seasoning, and then add in the tomato sauce. Simmer for 5 minutes. Stir in the black beans.
- When the potatoes are done, slice them down the middle and push the ends towards each other to open them up. Gently mash the insides with a a fork. Top with the taco meat and beans and add your favorite taco toppings.
